Two nice slices of bread with honey caramelized onions, delicious camembert cheese and a few slices of the last pears of the winter. The whole thing is grilled in butter in the pan and eaten hot with a good crunchy salad: that's the menu for this new recipe we're proposing today. As simple as it is comforting, grilled cheese has everything to please and warm up the still slightly chilly days of this early spring!
Ingredients for 4 people
- 8 large slices of semi-complete bread
- 1 pear
- 2/3 of a Camembert cheese
- 1 large onion or 2 medium ones
- 1 tablespoon of honey
- semi-salted butter
- 1 tablespoon of olive oil
- salt and pepper
Preparation:
1. In a hot frying pan, fry the onion cut into small pieces in a knob of butter and 1 tablespoon of olive oil. Add the honey, then let it gently cook until the onion is tender and slightly colored. Season with salt and pepper. Set aside.
2. Peel the pear, cut it in half, remove its seeds, then slice it into thin strips about 2 to 3 mm thick. Set aside.
3. Slice Camembert cheese into thin strips, also about 2 to 3 mm thick. Set aside.
4. Heat a frying pan over low/medium heat, then make the sandwiches.
5. Take the slices of bread and spread butter on one side only.
6. Place a quarter of the caramelized onions on the unbuttered side, then a quarter of the pear slices, and finally 3 to 4 slices of Camembert. Season with salt and pepper if desired, then close the sandwich with another half slice of bread, buttered side out. Repeat the same operation with the remaining slices, for the 3 remaining sandwiches.
7. Once the pan is hot, place the grilled cheese in the pan and let it cook for about 3 minutes on each side, making sure that the bread does not blacken. It should just brown and the Camembert should melt.
8. Serve the grilled cheese warm with a salad.

Additional tips
- This recipe can also be made with apple and another cheese, like Livarot for example.
- Another, softer variation: replace the semi-complete bread with good sandwich bread bought from your favorite baker.
